Southwest Salad! Start out with your favorite lettuce, add a handful of shredded chicken, corn, black beans, bell peppers and seasoned rice. Top off with your favorite salsa for your dressing and here you go, lunch that is portable, healthy, interesting and on a budget. As a wife and mom of a family of 5, I am all about stretching a meal and a budget. This dinner (stuffed bell peppers – see prior post for details) that originally cost $15 has fed 4 for dinner and 2 for lunch (and I still have 1 whole chicken breast for another meal).
